This is one of my family’s favorite meals. It works great for potlucks, (you might want to cut the round steak into smaller pieces) and I’ve been known to fix it, and put it in a very low oven – 200-225 degrees right before we walk out the door on Sunday morning. It’s ready and waiting for us when we get back!
Cut round steak into pieces. Flour and brown in skillet. Set aside.
In 9 x 13 casserole dish, pour one can of Beef Consomme and one can of water. Add 3/4 cup of regular rice – mix. Place round steak pieces on top of rice. Slice an onion and a green pepper – laying slices on top of meat. (Can add sliced tomato, if desired.)
Cover tightly with aluminum foil and cook at 350 degrees for one hour. Enjoy! It’s a meal by itself!
