Marvelous Meatloaf

I have never taken this meatloaf to potluck and brought home leftovers. It’s always GONE! I believe the secret is adding applesauce, instead of an egg. Of course, the topping doesn’t hurt! Enjoy!

2 lbs. ground chuck, 1/2 green pepper, diced small; 1 tsp. minced onion flakes (I just shake the bottle a few times – can use real diced onion, of course); 1 cup of applesauce (I use two of the individual serving cups), four slices of toast, crumbled (I put it in the food processor.)

Cover bottom of broiling pan with foil. Spray the top part with cooking spray. Mix all above ingredients in a large bowl. Dump onto broiling pan top, and shape into a loaf. Bake for 45-55 minutes, depending on how thick it is. Of course, the thinner the loaf, the shorter cooking time.

Take out of oven. Mix ketchup with brown sugar (I never measure – sorry!) and pour over the top of the meatloaf. Put back in the oven for five extra minutes to thicken the topping. Delicious!
